Acetic acid contained in apple cider vinegar suppresses appetite, increases metabolism, and reduces water retention. Scientists also theorize that apple cider vinegar interferes with the body's digestion of starch, which mean lower amount of glucose is absorbed into the bloodstream.

In a study done in Japan, 175 obese people took either vinegar or water daily for 12 weeks and their diets were similar. At the end of the study, those who used vinegar had lost an average of 1-2 pounds over the 3-month period.

Furthermore, an experiment carried out by a group of volunteers shows a reduction in their overall carbohydrate consumption after consuming of a small amount of vinegar. The result shows a reduction range of 200 to 275 calories a day and a monthly weight loss of up to 1.5 pounds.

In addition, separate research found taking vinegar along with bread not only lowered glucose and insulin responses, but also increased levels of satiety. The rating of satiety was directly related to the acetic acid level in the vinegar. The researchers also suggest that vinegar may turn on certain genes involved in breaking down fats but the effect is probably very subtle. Hence, exercise and food portion control are still important in weight reduction.
